Last week, we took to social media, asking Stone fans to tell us what time-honored holiday treats they’d like to see our test kitchen tackle in an attempt to make them better using craft beer. A wide variety of suggestions came back, some in the form of pleas. We took some of the most popular and got to work simmering, whisking and brushing a variety of brews into a pair of desserts that, when the dust of the confectioner sugar cleared, were all the better for it. We knew Amanda Baumgarten could cook, but once we caught a glimpse of one of her homebrew recipes, it was abundantly clear that her artisanal skills extended beyond the kitchen and into the brewing arena. A former cheftestant on Bravo TV’s wildly popular competition show Top Chef, the talented toque recently opened a thriving gastropub called Waypoint Public in San Diego’s North Park neighborhood. Despite being in one of the most craft beer-centric parts of the city (the community is also home to Toronado San Diego, Tiger! Tiger! Tavern, Mike Hess Brewing Company, Thorn St. Brewery and lots more), her restaurant is known for having one of the best beer selections in town. That clout rose even more this summer when Baumgarten was able to add a beer of her own devising to the tap list—Amanda Vs. The Arbolcots.
It took us years (yep, plural, as in more than two 365-day spans) to open San Diego’s largest operating restaurant in the city’s Liberty Station community. Because of that site’s historic status—the mixed-use development was built on the former Naval Training Center campus, which was formerly the largest U.S. Navy training site on the West Coast—there were many considerations that needed to be taken to maintain the integrity of the structure we took over, especially since we were installing a kitchen and seating for more than 600 diners at a time, but also a 10-barrel brewhouse with a 60-barrel capacity cellar. We put a lot of thought into every single detail at Stone Brewing World Bistro & Gardens – Liberty Station, and that goes double (if not triple or quadruple…this is starting to sound like a run-down of Trappist ale styles) for the food. You can deck the halls with as many boughs of holly as you can get your mittened hands on, but without plates, bowls, baskets and platters of tasty holiday-themed sustenance scattered around your decked out abode, those decorations are bound to be a bit for naught. You can’t eat holly or mistletoe (or at least you shouldn’t), and those candy canes and stale popcorn hanging on the tree just won’t cut the myrrh-infused mustard. What every home needs come December is an array of warming, comforting treats and tidbits that burst with traditional holiday flavors and drive home the yuletide spirit. Never ones to point out a deficiency without providing a potential solution, we have the answer to any home’s lack of goodies in the form of several beer-infused recipes straight from our own Stone Brewing World Bistro & Gardens kitchens as well as some well-respected craft beer and cooking aficionados. Even if it’s just the oxygen coursing through our lungs, come this time of year, we all have something to be thankful for. We are all blessed to varying degrees and, without question, those of us who know, appreciate and get to enjoy spectacular craft beer have plenty to be thankful for in a day and age when there are so many high-quality ales and lagers available to satiate our palates. Surely, anybody reading this latest entry in the Stone Blog will be enjoying one or many tasty brews with their Thanksgiving Day vittles. We are very much in favor of that, but would like to suggest taking your Turkey Day artisanship to the next level by incorporating your beverage of choice directly into the food that graces your table. To help facilitate that, we’ve tapped one of our talented chefs, Jeff Stanko from Stone Brewing World Bistro & Gardens – Escondido, to provide a trio of Thanksgiving recipes made all the more delicious thanks to potent doses of Stone beers. Put down the Stove-Top and other fowl offerings, and give you and yours even more reason to be thankful this year.
In preparation for our Epic Eve Dinner and the Stone Epic Festival: The Final Chapter, our all-out festival celebrating all 11 vintages in our Vertical Epic Ale series, Chef Alex Carballo and “Dr.” Bill Sysak teamed up to develop nearly two-dozen recipes for dishes that pair with each of the beers.
Realizing not all of our fans will be able to make it out for these events, but are as amped up as we are to uncap their bottles of Vertical Epic Ale at their own tastings, we wanted to provide the means by which to prepare food that will fall perfectly in sync with those beers. The following are recipes for four dishes that, when put together, make up a comprehensive meal.
